Last Night’s Risotto
Home late but won’t settle for an instant dinner. Risotto it is- because it’s not pasta or noodles or stir fry over rice.
Jasmine rice mixed with a long grain black wild rice. Sauteed onions, capers, red pepper flakes. Herbs that look like weed- parsley, basil and oregano. Veggie sausage, broccoli, baby spinach, pesto and a few shakes of parmesan (sure I bastardized it). Cook with lots of water (poured in small intervals) and some white wine if you so desire. Stir ad infinitum or at least until rice is soft and a bit gooey.
What I think I used:
2 cups jasmine rice
1 cup long grain black wild rice
1 small onion chopped
1 tablespoon of capers (kalamata olives would be nice as well)
1 teaspoon red pepper flakes
a few shakes of marijuana wanna-be’s
4 veggie sausage chopped into cubes
3 cups chopped broccoli
3 fist-fulls of spinach
3 or 4 tablespoons of pesto
1 quart of water (maybe more- I can’t remember)
salt & pepper
grated parmesan to taste
tip w/ risotto: have your stock/water boiling in another pot so it’s hot and ready the entire cooking process.
I like risotto because it’s sophisticated geriatric food.
